Ash Pyramid (goat)P
An ash-coated flat-topped pyramid of soft cheese with full-on complex flavours when older.
Appleby's Red Cheshire (cow)
A crumbly yet moist cheese with a piquant but tasty flavour which is a good partner for most beers.
Applewood Smoked Cheddar (cow)V
Creamy cheddar, smoked flavoured and coated in Paprika.
Caerphilly Gorwydd (cow)
Moist and crumbly with a pleasing damp cellar aroma and succulent tangy flavours.
Camembert Rustique (cow)P
Genuine Normandy cheese, creamy smooth and full flavoured. (Recommended)
Cashel Blue (cow)P
Ireland's first blue cheese. Creamy but a `dryish' texture and a mellow flavour. Recommended.
Celtic Promise (cow)U V
A smear-ripened cheese with a smooth orange rind dusted with white mould, it has a pungent farmyard aroma and has the characteristic sweet-sour spicy character of washed-rind cheeses.
Colston Bassett Stilton (cow)
Still handmade, creamy with a lovely mellow flavour. (The best Stilton money can buy!)
Cornish Yarg (cow)V
A delicious, semi hard cheese that is creamy under the rind and crumbly in the centre. The cheese is wrapped in attractive silvery green nettle leaves, offering a delicate and unique flavour.
Devon Blue (cow)V
Moist and delicately crumbly with a lively bite from the blue.
Dorset Drum Cheddar (cow)
Made by Denhay Dairy this wonderful farmhouse mature premium cheddar not only looks great but it tastes even better!
Flower Marie (ewe)U V
Made in Sussex, this wonderful cheese has a soft pink-tinged rind that protects the soft densely-flavoured interior that melts in the mouth revealing a subtle caramel sweetness combined with a lemony freshness.
Golden Cross (goat)U V
These bloom-rinded logs are first coated in ash. They have a dense, even texture and a medium-strong flavour.
Goulds Cheddar (cow)V
Popular with young and old Gould's Cheddar is very special mature Cheddar made on the Gould's farm.
Hawes Wensleydale (cow)V
A light, mild crumbly cheese from this successful creamery.
Hereford Hop (cow)U V
Creamy medium pressed cheese with a mild flavour, covered in toasted hops.
Jersey Blue (cow)
A soft and strongly piquant style of blue cheese, a good partner for strong ales.
Lancashire (cow)U
A `Tasty Lancashire' made with the curds of three consecutive milkings. Crumbly texture with a tangy flavour.
Lubborn Somerset Brie (cow)V
Somerset Brie is creamy with a mild, fresh flavour and a soft edible white rind. The curd is the colour of straw, as it ripens from the outside in, it becomes softer, richer and with a fuller flavour.
Mull of Kintyre (cow)V
A mature Scottish cheddar with a strong flavour; a favorite of last year's festival.
Oakwood Smoked Cheddar (cow)
Traditional strong smoked cheddar.
Porter (cow)P V
Cahill's Farm has developed an interesting range of semi-soft flavored cheddars. Using a base of tangy Irish cheddar flavoured with porter.
Porter Whisky (cow)P V
A tangy Irish semi-soft cheddar, flavoured with Irish Whiskey.
Quickes Red Leicester (cow)
A smooth, buttery textured cheese, orange-red paste with good depth of flavour.
Ragstone (goat)U V
A rich creamy goats' milk cheese which varies in flavour from light and lemony to strong and goaty.
Roquefort Papillion Noir (ewe)U
This cheese has a slightly crumbly texture, buttery with blue veins of mold extending to the edges. The taste is complex, soft, creamy, slightly salty, with an after taste that leaves the palate craving for more.
Shropshire Blue (cow)P V
Similar to Stilton but with an orange colouring, never actually made in Shropshire. Medium blue flavour with a firm, creamy texture.
Spenwood (ewe)U V
A hard-pressed cheese that is aged for 3 months. This hard cheese is slightly flaky and creamy in the mouth releasing a sweet caramel flavor. Spenwood has a natural rind and a rich, nutty flavour with a tangy finish.
Stinking Bishop (cow)P V
The rind of this cheese is washed in perry which is made from the Stinking Bishop variety of pear. This washing encourages a pungent and spirited aroma.
Swaledale (cow)V
A medium firm texture cheese with a pleasing mellow flavour.
Swaledale (goat)
The grey, fluffy rind contrasts superbly with the bright white interior. Creamy, moist and with gentle sweet overtones.
Swaledale (ewe)V
Sweet and pleasantly creamy flavour, delicate and not too strong.
Teifi (Seaweed) (cow)U V
Wonderful gouda-style cheese with seaweed wrapped around it. A creamy texture with a good flavour that will surprise.
Tintern (cow)V
Creamy cheddar blended with Chives and shallots.
White Stilton V
Moist, crumbly young stilton with a clean sharp taste.
Wigmore (ewe)V
The cheese has a fantastic taste, combining floral flavours with burnt caramel, macadamia nuts and roast lamb. Wigmore constantly wins gold medals at the British Cheese Awards.
Y-Fenni (cow)V
A mature cheddar cheese blended with wholegrain mustard and Welsh brown ale. It has a full tangy mustard flavour, moist texture, pale-yellow colouring speckled with the mustard grains.
